Herb Filled Chicken Breast with Spicy Mango Chutney

This crazy delicious Herb Filled Chicken Breast is as good as it gets and the ultimate quick and easy weeknight meal.


What makes this extra delicious is that the sweet and savory mango chutney paste is spread in the chicken.

Ingredients

  • 4 - 6 boned chicken breasts, skinned

  • 1/2 bottle Superb Blend Spicy Mango Chutney

  • 2 tbsp, olive oil

  • 1 green sweet pepper, diced small

  • 2 large onions, minced

  • 1/2 cup of fresh basil, chopped

  • 4 stalks green chives, sliced fine

  • 1/2 tsp. fresh thyme

  • 5 cloves garlic, minced

  • Salt and fresh black pepper to taste

  • Additional oil to lightly coat griddle

Preparation

Cut a pocket lengthways down the top of each chicken breast.

Combine all other ingredients in a bowl.

Fill each pocket with some of the herb/Superb Blend Spicy Mango Chutney mixture. Secure the openings with a cocktail sticks and arrange the stuffed breasts in a shallow dish.

Pour any remaining herb mixture over the chicken and turn to coat well. Leave to marinate at room temperature for at least 1 hour.

Pre-heat a large skillet or cast iron griddle. Grease lightly with olive oil and cook each chicken breast for about 4 minutes on each side, or until the juices run clear when pierced with a skewer. Do not overcook.

Serve immediately with rice and a green salad.
